Rhubarb and ginger rice

I tried this yesterday (during the 2019 open studios) - lemon rice but with rhubarb – and it was brilliant. Go through the whole process in the same way, but just before adding the turmeric and turning off the fire, add some very finely sliced rhubarb pieces and toss them around in the spices. They really hardly need any cooking if you cut it fine. Taste to check (but remember the rice will absorb the sourness, especially if it’s hot, and get blander after some minutes, so add a bit more rhubarb than you think needed. And if it runs short, add a bit of lemon juice. That’s it. When you add the rice, the rhubarb will have a bit of crunch too.
