You need the rainy season for making and eating these... cloudy, drizzly outside, a bit of a chill in the air..... the desire to curl up on the divan with a razai and a good book .... and mother or grandaunt in the kitchen making these and sending them in fresh and hot to be eaten straightaway. Ohhh yummm!

They are little things these common bhajjis, made with onions or any interesting leaves or fast cooking vegetables. Light, airy, melt in the mouth.... So it is annoying to see what passes for them in the UK. People really do like them, but they are often large, dark brown, dense things, sodden with oil. It hurts to see them!
